The following wonderful scallop salad comes from Tangled Noodle:
Yields 2 to 4 servings
Ingredients:
1 lb scallops, poached
1 cup orzo
Red onion, thinly sliced
2 large tomatoes, seeded and coarsely chopped
Basil, shredded
Olive oil
Red wine vinegar
salt and pepper
Lettuce leaves (I used red leaf)
